The onset of autumn reminds us that mutton is back on the menu. Available from September to April, mutton has a surprisingly complex flavour, mature yet mild. The secret to mouth watering mutton is long, slow cooking – the fat melts away through the meat, leaving it tender and moist with a deliciously crispy exterior.
