Ingredients
Place the cranberries in a small pan with the orange juice and bring gently to a simmer. Cook gently until softened but still holding their shape, about 5 minutes. Add the zest and sugar and stir to dissolve the sugar. Remove from the heat. Melt the butter over a low heat, add the onion and celery and cook gently, stirring occasionally until softened, about 10 minutes. Stir in the cranberries and breadcrumbs. Season to taste with salt and pepper and stir in egg to bind. Allow the stuffing to cool completely before using.
